Prepare the Onions
Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.
Make the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold sparkling water until the batter is smooth and well combined.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off.
Fry the Onion Rings
Carefully place the battered onion rings into the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.
