Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips, approximately 1/2 inch wide.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Dry the Potatoes
Drain the soaked potatoes and pat them dry using a clean kitchen towel or paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a portion of the dried potato strips to the hot oil. Fry in batches to avoid overcrowding. Cook for 5-7 minutes or until golden brown and crispy.

Drain and Season
Remove the fries with a slotted spoon and place them on paper towels to drain excess oil. Season with salt, black pepper, and garlic powder to taste.
