Begin by slicing the chicken breast into thin strips, about 1/4 inch thick.

Slice the onion, red bell pepper, and green bell pepper into thin strips.
Cooking

Cook the Chicken
In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced chicken breast. Season with salt, black pepper, and garlic powder. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and fully cooked.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and peppers. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized.

Combine Chicken and Vegetables
Return the cooked chicken to the skillet with the vegetables. Mix well and cook for another 2-3 minutes to combine the flavors.

Assemble the Hoagies
Slice the hoagie rolls lengthwise, but not all the way through. Place the chicken and vegetable mixture evenly into each roll. Top with slices of provolone cheese.

Melt the Cheese
If desired, place the assembled hoagies under a broiler for 1-2 minutes to melt the cheese slightly.

Serve hot, optionally garnished with additional sautéed peppers or a sprinkle of parsley.
