Preparation

    Prepare the Onions

    Slice the medium onion thinly. In a skillet over medium heat, add 1 tablespoon of butter and sauté the onions until they are caramelized and golden brown, about 10-15 minutes. Set aside.

    Prepare the Short Rib

    If using leftover short ribs, shred the cooked short rib into bite-sized pieces. If they're cold, you can warm them in a microwave or in a small saucepan with a splash of broth.

Assembly

    Assemble the Sandwich

    On a slice of Challah Texas toast, layer a generous amount of smoked gouda cheese followed by shredded short rib, caramelized onions, sliced pepperoncini, and then top with provolone cheese. Place another slice of Challah on top to complete the sandwich.

Cooking

    Grill the Sandwich

    In the same skillet used for the onions, add the remaining tablespoon of butter and heat over medium heat. Place the assembled sandwich in the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Once the sandwich is grilled to perfection, remove it from the skillet, slice it in half, and serve immediately while hot.
