    Prepare the Short Ribs

    Season the beef short ribs generously with salt, black pepper, garlic powder, and onion powder. Let them rest at room temperature for about 30 minutes.

    Chop the Vegetables

    While the ribs are resting, chop the onion, carrots, and celery into bite-sized pieces.

Cooking

    Brown the Ribs

    In a large Dutch oven or heavy pot, heat a tablespoon of oil over medium-high heat. Add the seasoned short ribs in batches and brown them on all sides for about 5-7 minutes. Remove them from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they begin to soften.

    Deglaze the Pot

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Allow the wine to simmer for about 3-5 minutes.

    Add Broth and Seasonings

    Add the beef broth, Worcestershire sauce, bay leaves, and fresh thyme to the pot. Stir to combine.

    Return the Ribs

    Return the browned short ribs to the pot, making sure they are submerged in the liquid.

    Cook the Ribs

    Bring the pot to a gentle simmer, then cover and reduce the heat to low. Cook for about 3 hours or until the ribs are tender and falling off the bone.

Serving

    Serve the Short Ribs

    Remove the bay leaves before serving. Serve the short ribs with the braising liquid and vegetables, garnished with fresh thyme if desired.
