Chicken and Marinade

Serving

Method

Marinate the Chicken

  1. 1

    Prepare the Marinade

In a medium bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper until well combined.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

Cook the Chicken

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 4

    Grill the Chicken

Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center. Remove from the grill and let it rest for 5 minutes.

Prepare the Vegetables

  1. 5

    Chop the Vegetables

While the chicken is grilling, dice the red bell pepper and red onion. If using frozen corn, thaw it according to package instructions.

  2. 6

    Mix the Toppings

In a large bowl, combine the grilled chicken (sliced into strips), red bell pepper, corn, red onion, and chopped cilantro. Toss gently to mix.

Serve the Dish

  1. 7

    Plate the Dish

Divide the chicken and vegetable mixture onto serving plates. Top with sliced avocado and crumbled feta cheese.

  2. 8

    Garnish and Enjoy

Serve with lime wedges on the side for squeezing over the chicken. Enjoy your Santa Fe Chicken!
