Method

Preparing the Salmon

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Salmon

    Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper.

    Roast the Salmon

    Roast the salmon in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Salad

    Cook the Quinoa

    If not already cooked, rinse 1 cup of quinoa under cold water. Then, cook it in a saucepan with 2 cups of water. Bring to a boil, then reduce to a simmer and cover for about 15 minutes or until water is absorbed. Fluff with a fork and let it cool.

    Prepare the Vegetables

    While the salmon is roasting, dice the zucchini and trim the asparagus. You can steam the asparagus for about 3-4 minutes until tender-crisp.

    Combine Salad Ingredients

    In a large mixing bowl, combine the arugula, cooked quinoa, diced zucchini, steamed asparagus, and drained chickpeas. Toss to combine.

    Add Almonds

    Add the sliced almonds to the salad and gently mix.

Making the Green Goddess Dressing

    Blend the Dressing

    In a blender or food processor, combine the Greek yogurt, fresh basil, chopped chives, lemon juice, minced garlic, salt, and black pepper. Blend until smooth and creamy.

    Adjust Seasoning

    Taste the dressing and adjust salt and pepper as needed.

Assembling the Salad

    Plate the Salad

    On individual plates or a large serving platter, layer the salad mixture. Flake the roasted salmon over the top.

    Drizzle with Dressing

    Drizzle the green goddess dressing over the salad just before serving.
