Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (1 tbs). Sprinkle active dry yeast (2 tbs) over the top and let it sit for 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Pour in the activated yeast mixture and melted unsalted butter (2 tbs). Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

Forming Pretzel Bites

  1. 4

    Shape the Dough

Once the dough has risen, punch it down and divide it into small pieces (about 1 oz each). Roll each piece into a small ball.

  2. 5

    Prepare Baking Soda Bath

In a large pot, bring water (10 cups) to a boil. Once boiling, carefully add baking soda (2 tbs) to the water. Reduce heat to a simmer.

  3. 6

    Dip in Bath

Using a slotted spoon, carefully drop the pretzel bites into the baking soda bath for about 30 seconds. Remove and place them on a baking sheet lined with parchment paper.

Baking and Finishing

  1. 7

    Preheat Oven

Preheat your oven to 450°F (230°C).

  2. 8

    Bake Pretzel Bites

Bake the pretzel bites for 10-12 minutes until golden brown.

  3. 9

    Add Toppings

Remove from the oven and immediately brush with melted butter (4 tbs). Sprinkle coarse sea salt (1 tbs) over the top while still warm.
