Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring 4 quarts of water to a boil. Add in 1 tablespoon of salt.

  2. 2

    Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

  1. 3

    Chop Veggies

While the pasta is cooking, chop the bell peppers, zucchini, carrots, cherry tomatoes, and broccoli into bite-sized pieces.

  2. 4

    Sauté Vegetables

In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. 5

    Add Vegetables

Add the chopped bell peppers, zucchini, carrots, cherry tomatoes, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.

Making the Sauce

  1. 6

    Add Broth

Pour in 1 cup of vegetable broth and bring the mixture to a simmer. Allow it to cook for an additional 2-3 minutes.

  2. 7

    Season

Stir in the grated Parmesan cheese, black pepper, and fresh basil. Mix well until the cheese is melted and the sauce is creamy.

Combining and Serving

    Combine Pasta and Sauce

Add the cooked pasta to the skillet with the vegetable sauce. Toss to combine, ensuring the pasta is fully coated with the sauce.

  2. 9

    Serve

Serve the Pasta Primavera hot, garnished with additional Parmesan cheese and fresh basil if desired.
