Preparation of Base

    Prepare the Ginger

    Peel and finely chop the fresh ginger to release its juices.

    Create Ginger Syrup

    In a saucepan, combine the chopped ginger, granulated sugar, and 2 cups of water. Heat over medium heat, stirring until the sugar is completely dissolved. Allow the mixture to simmer for about 10 minutes, then remove from heat.

    Strain the Syrup

    Once cooled, strain the ginger syrup through a fine mesh sieve into a bowl or pitcher, discarding the ginger solids. Add the remaining 2 cups of water and lemon juice to the syrup, mixing well.

Fermentation Process

    Activate the Yeast

    In a small bowl, combine the active dry yeast with a few tablespoons of warm water (not hot). Let it sit for about 5 minutes until frothy.

    Add the activated yeast to the ginger-lemon mixture, stirring gently to combine. Cover the mixture with a clean cloth and let it sit at room temperature for 24 hours to ferment.

Bottling

    Prepare Bottles

    After fermentation, clean glass bottles (preferably with swing-top caps) and ensure they are completely dry.

    Bottle the Ginger Beer

    Using a funnel, pour the ginger beer mixture into the prepared bottles, leaving about an inch of headspace at the top. Add a few fresh mint leaves and a pinch of lime zest into each bottle for additional flavor.

    Seal and Store

    Seal the bottles tightly and store them in a cool, dark place for another 3-5 days to carbonate. Check the bottles daily for pressure; once they feel firm, refrigerate them to stop the fermentation process.
