Mac & Cheese Bites

Cook the Macaroni
Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Prepare the Cheese Mixture
In a large bowl, combine the cooked macaroni, cheddar cheese, cream cheese, eggs, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Form the Bites
Using your hands, form the macaroni mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Coat the Bites
Set up a breading station. In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, place the bread crumbs. Dip each mac & cheese ball first in flour, then in egg, and finally in bread crumbs, ensuring they are fully coated.

Fry the Bites
In a deep frying pan, heat the oil over medium heat. Once the oil is hot, carefully add the breaded mac & cheese bites in batches, frying for about 3-4 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

Add Tomatoes and Seasoning
Pour in the canned crushed tomatoes and stir in the dried oregano, dried basil, salt, black pepper, and sugar. Bring the sauce to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens slightly. Adjust seasoning to taste.
