    Preparing the Potatoes

    Wash and peel the Russet potatoes. Cut them into long, thin strips, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and prevents them from sticking together.

    Heating the Oil

    In a large, heavy-bottomed pot or deep fryer, add the vegetable oil and heat it to 350°F (175°C). Use a thermometer for accuracy.

    Drying the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. Make sure they are as dry as possible to avoid oil splatter.

    Frying the Potatoes

    Carefully add a handful of dried potato strips into the hot oil. Fry for about 5-6 minutes or until they turn golden brown and crispy. Do not overcrowd the pot.
