Fish Batter Preparation

Make the Batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer or sparkling water while stirring until a smooth batter forms. Set aside.

Prepare the Fish
Pat the fish fillets dry with paper towels. Season both sides with salt and black pepper. Dredge each fillet in the batter, allowing the excess to drip off.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries. Soak the fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.
Frying

Fry the Fries
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 325°F (160°C). Carefully add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Fry the Fish
Increase the oil temperature to 350°F (175°C). Carefully add the battered fish fillets to the hot oil, frying in batches for about 4-5 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
Serving

Plate and Serve
Serve the crispy fish alongside the fries. Optionally, serve with lemon wedges and tartar sauce.
