Pretzel Dough Preparation

    Activate Yeast

    In a small bowl, mix the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes foamy.

    Mix Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Pour in the yeast mixture once it is foamy, and mix until a dough begins to form.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour until it doubles in size.

Crab Filling Preparation

    Mix Filling Ingredients

    In a medium bowl, combine the lump crab meat, shredded mozzarella cheese, chopped green onions, Old Bay seasoning, minced garlic, and melted butter. Mix gently to avoid breaking up the crab meat.

Pretzel Assembly and Baking

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Shape the Pretzels

    Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a long rope (about 24 inches), then twist into a pretzel shape.

    Boil the Pretzels

    In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully place each pretzel in the boiling water for about 30 seconds, flipping halfway. Remove and place on a baking sheet lined with parchment paper.

    Fill the Pretzels

    Using a knife, carefully cut a small slit in the center of each pretzel and gently stuff it with the crab filling mixture.

    Brush the pretzels with melted butter and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.
