Calamari Preparation

Clean the Calamari
Rinse the calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

Prepare the Breading
In a shallow bowl, mix the all-purpose flour, cornstarch, salt, black pepper, cayenne pepper, and garlic powder. In another bowl, whisk the egg and buttermilk together.

Coat the Calamari
Dip the calamari rings into the buttermilk mixture, then dredge in the flour mixture until fully coated. Shake off any excess.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Cook the Tomatoes
Add the canned crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar to the saucepan. Stir well to combine.

Simmer the Sauce
Bring the sauce to a simmer, then reduce heat to low. Let it cook for about 15-20 minutes, stirring occasionally, until thickened.
