In a bowl, combine warm water and yeast. Let sit for 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let rise in a warm area for 1-2 hours or until doubled in size.

Preheat the Brick Oven
Preheat the brick oven to 700°F (370°C). Allow it to heat for at least 30 minutes to ensure an even cooking temperature.

Shape the Pizza
Once the dough has risen, punch it down, and divide it into 2-3 equal portions. Roll out each portion on a floured surface into a 12-inch circle.

Transfer the dough to a pizza peel. Add your desired sauce, cheese, and toppings (e.g., mozzarella, pepperoni, vegetables).
