Roasted Potatoes

Method

Roasted Potatoes

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Potatoes

Wash the baby potatoes thoroughly and cut them in half.

  3. 3

    Season the Potatoes

In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, black pepper, and fresh rosemary until evenly coated.

  4. 4

    Roast the Potatoes

Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

  5. 5

    Serve

Remove from the oven and serve hot as a side dish.

Hashbrowns

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and grate them using a box grater or food processor.

  2. 7

    Remove Excess Moisture

Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

  3. 8

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

  4. 9

    Cook the Hashbrowns

Add the grated potatoes to the skillet, spreading them out evenly. Season with salt, black pepper, and onion powder. Cook for about 5-7 minutes, or until the bottom is golden brown.

  5. 10

    Flip and Cook Again

Carefully flip the hashbrowns using a spatula and cook for an additional 5-7 minutes until the other side is golden brown.

  6. 11

    Serve

Remove from the skillet, sprinkle with fresh chives, and serve immediately.
