    Prepare the Bacon

    Lay the thick-cut bacon strips out on a baking sheet. If desired, season both sides of the bacon with black pepper, brown sugar, garlic powder, and paprika for added flavor.

    Soak the Hickory Wood Chips

    In a bowl, soak the hickory wood chips in water for at least 30 minutes. This will help create smoke when you use them in the smoker.

Smoking

    Prepare the Smoker

    Preheat your smoker to 200°F (93°C). If using a charcoal smoker, add lit coals and then add the soaked hickory wood chips on top of the coals.

    Smoke the Bacon

    Place the bacon strips directly on the smoker racks. Close the smoker lid and smoke for about 2 to 3 hours, or until the bacon reaches your desired level of smokiness and doneness.

Finishing Touches

    Cool and Store

    Once the bacon is done smoking, remove it from the smoker and let it cool on a wire rack. After cooling, you can use it immediately or store it in an airtight container in the refrigerator for up to a week.
