Prepare the Egg Mixture

    Chop the Vegetables

    Dice the tomatillos, jalapeño pepper (remove seeds for less heat if desired), and red onion into small pieces.

    Beat the Eggs

    In a large bowl, crack the eggs and whisk them together until fully combined. Add the salt and black pepper, and mix well.

    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 2-3 minutes until it begins to soften.

    Add Chilis and Tomatillos

    Add the diced jalapeño and tomatillos to the skillet. Cook for an additional 3-4 minutes until the tomatillos are tender and the mixture is fragrant.

    Scramble the Eggs

    Pour the beaten eggs into the skillet with the vegetable mixture. Stir gently with a spatula, cooking until the eggs are just set but still creamy, about 3-4 minutes.

Prepare the Toppings and Sides

    Warm the Tortillas

    In a separate skillet or on a griddle, warm the tortillas over medium heat for about 30 seconds on each side until soft and pliable.

    On each plate, serve 2 warm tortillas, a generous portion of the scrambled egg mixture, a dollop of sour cream, a sprinkle of shredded cheese, and a side of fire roasted salsa.
