Method

Prepare the Egg Mixture

    Whisk the Eggs

    In a large bowl, crack the eggs and whisk them together until well combined.

    Add Vegetables

    Stir in the diced chili peppers and tomatillos into the whisked eggs.

    Season the Mixture

    Add salt and black pepper to the egg mixture, and stir to combine.

Cook the Eggs

    Heat the Butter

    In a large skillet, melt the butter over medium heat until it starts to foam.

    Add the Egg Mixture

    Pour the egg mixture into the skillet and let it cook undisturbed for a minute.

    Scramble the Eggs

    Using a spatula, gently stir the eggs while cooking until they are softly scrambled to your liking.

Prepare Protein Options

    Cook Bacon or Sausage

    If using bacon, cook the chopped bacon in a separate pan over medium heat until crispy. If using sausage, cook crumbled sausage in the same fashion until browned.

    Roast Vegetables (if applicable)

    If you choose roasted vegetables, preheat the oven to 400°F (200°C), toss chopped vegetables in olive oil, and roast for 20-25 minutes until tender.

Assemble and Serve

    Warm the tortillas in a dry skillet or microwave until soft and pliable.

    On a plate, serve a generous portion of scrambled eggs, topped with your choice of bacon, sausage, or roasted vegetables. Add a dollop of sour cream, sprinkle with cheese, and serve with fire roasted salsa on the side.
