Dough Preparation

    Make the Dough

    In a large bowl, combine the flour and salt. Create a well in the center and add the eggs. Mix with a fork until a dough starts to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Mix the Filling

    In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped spinach, minced garlic, salt, and pepper. Mix well until fully combined.

Ravioli Assembly

    Roll out the Dough

    After the dough has rested, divide it into four pieces. Roll out each piece thinly using a pasta machine or a rolling pin.

    Form the Ravioli

    Place small mounds of filling (about 1 tsp) on one sheet of dough, leaving space between each mound. Moisten the edges with water and place another sheet of dough on top. Press down to seal and cut into squares.

Sauce Preparation

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add canned diced tomatoes, basil, salt, and pepper. Simmer for 10 minutes.

Cooking the Ravioli

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the ravioli and spoon the sauce over them. Garnish with additional Parmesan cheese if desired.
