Method

Preparation of Potatoes

    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes, then cut them into small cubes.

    Season and Roast

    In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for about 25-30 minutes, or until golden and crispy, stirring halfway through.

Cooking the Filling

    Cook the Vegetables

    In a large skillet over medium heat, add a small amount of oil. Sauté the diced onion and bell peppers until softened, about 5-7 minutes. Add the spinach and cook for an additional 1-2 minutes until wilted.

    Cook the Eggs

    In a bowl, whisk the eggs. Pour them into the skillet with the cooked vegetables. Scramble the egg mixture until fully cooked, about 3-5 minutes.

    Add Protein

    Add the cooked bacon and sausage to the skillet, mixing well to combine all ingredients. Cook for an additional 2 minutes to heat through.

Assembling Tacos/Burritos

    Warm the Tortillas

    Warm the flour and corn tortillas in a dry skillet or wrap in foil and place in the oven for a few minutes.

    Fill the Tortillas

    Spoon the egg and filling mixture onto the warmed tortillas. Top with shredded cheddar cheese, sour cream, salsa, and sliced avocado.

    Roll and Serve

    For tacos, simply fold the tortillas over the filling. For burritos, roll the tortillas tightly around the filling. Serve immediately with the roasted potatoes and whole fruit on the side.
