Biscuit Preparation

Preheat Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Cut in Butter
Add the unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk
Pour in the milk and stir until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a floured surface. Pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter.

Bake Biscuits
Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.

Prepare Fillings
While the biscuits are baking, prepare the fillings. Chop the cooked bacon, slice the avocado, and wash the fresh spinach.
Assemble Sandwich

Cut Biscuits
Once the biscuits are baked, remove them from the oven and let them cool slightly. Cut each biscuit in half horizontally.

On the bottom half of each biscuit, layer the scrambled eggs, cheddar cheese, chopped bacon, avocado slices, and fresh spinach.

Drizzle hot sauce and mayo on top of the fillings as desired, then place the top half of the biscuit back on.
