Prepare the Filling

Cook the Meat
In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.

Add Seasoning
Stir in taco seasoning and cook according to package instructions, usually adding a little water and simmering for 5 minutes.

Heat Refried Beans
In a small saucepan, heat refried beans over low heat until warmed through.

Dice the potatoes into small cubes.

Assemble Tacos/Burritos

Warm Tortillas
Warm flour and corn tortillas in a dry skillet over low heat for about 30 seconds on each side.

Fill Tortillas
Spoon a portion of the meat mixture, refried beans, and your choice of toppings (cheese, lettuce, tomatoes, jalapeños, and sour cream) onto each tortilla.

Roll or Fold
For burritos, fold in the sides and roll tightly. For tacos, simply fold the tortilla in half.

Serve the tacos or burritos with a side of crispy potatoes and a piece of whole fruit.
