Method
Preparation of Pork
- 1
Season the Pork
Rub the Berkshire pork shoulder with salt and black pepper all over. Ensure an even coating for maximum flavor.
- 2
Prepare the Marinade
In a bowl, combine minced garlic, chopped rosemary, olive oil, apple cider vinegar, honey, and Dijon mustard. Mix well until fully combined.
- 3
Marinate the Pork
Place the seasoned pork shoulder in a large resealable bag or a shallow dish. Pour the marinade over the pork, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
Cooking
- 4
Preheat the Oven
Preheat your oven to 300°F (150°C).
- 5
- 6
Add the Pork
Remove the pork from the marinade and place it on top of the vegetables in the roasting pan.
- 7
Roast the Pork
Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for approximately 3 hours, or until the pork is tender and easily pulls apart with a fork.
- 8
Finish the Roast
In the last 30 minutes of cooking, remove the foil to allow the top of the pork to brown and develop a crust. Check the internal temperature of the pork; it should reach at least 190°F (88°C).
- 9
Rest and Serve
Once cooked, remove the pork from the oven and let it rest for at least 15 minutes before slicing. Serve with the roasted vegetables.
