Making the Pastry Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Do not overmix.

    Chill the Dough

    Divide the dough into two portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preparing the Filling

    Mix Cream Cheese Filling

    In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and well combined.

    Prepare Fruit Filling

    If using fruit preserves, simply set aside in a small bowl. For chocolate filling, measure out chocolate chips.

Assembling the Pastries

    Roll Out Dough

    On a lightly floured surface, roll out one disc of chilled pastry dough to about 1/8 inch thickness. Cut into desired shapes (squares, circles, etc.) using a pastry cutter or knife.

    Fill the Pastries

    Place a tablespoon of cream cheese filling in the center of half of the cut shapes. For the other half, place a tablespoon of fruit preserves or a few chocolate chips.

    Seal and Brush

    Place the other half of the shapes on top of the filled ones and press the edges to seal. Use a fork to crimp the edges. Brush the tops with beaten egg and sprinkle sesame seeds if desired.

Baking the Pastries

    Preheat your oven to 375°F (190°C).

    Place the assembled pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
