Cocktail Preparation

  1. 1

    Prepare the Simple Syrup

In a small saucepan, combine equal parts of sugar and water (1 cup each) over medium heat. Stir until the sugar dissolves completely. Remove from heat and let it cool. This is your simple syrup.

  2. 2

    Muddle Lime Leaves

In a cocktail shaker, add the lime leaves. Use a muddler or the back of a spoon to gently bruise the leaves to release their oils and aroma.

  3. 3

    Mix the Cocktail

Add the fresh lime juice, simple syrup, and gin to the shaker with the muddled lime leaves. Fill the shaker with ice cubes (2 cups) and shake well for about 15 seconds until well combined and chilled.

  4. 4

    Strain into Glasses

Fill four tall glasses with ice cubes (2 cups each). Strain the cocktail mixture over the ice in each glass.

  5. 5

    Top with Soda Water

Gently top each glass with soda water (3/4 cup in each glass) to fill them up. Stir gently to combine.

Garnishing

  1. 6

    Add Garnish

Garnish each drink with a lime slice and a few fresh mint leaves for a refreshing touch.

  2. 7

    Serve

Serve immediately and enjoy your refreshing Lime-Leaf Collins!
