Method

Preparation of Pears

  1. 1

    Soak the Pears

Peel and core the pears, then slice them into thin wedges. Place the pear wedges in a bowl and sprinkle brown sugar over them. Pour in the Campari and gently toss to ensure the pears are well-coated. Cover the bowl and refrigerate overnight to allow the flavors to meld.

Mixing the Cocktail

  1. 2

    Combine Ingredients

In a cocktail shaker, combine the Carpano Classico Vermouth and Beefeater Dry Gin. Add the soaked pears along with the Campari liquid from the overnight soak.

  2. 3

    Add Ice

Fill the shaker with ice cubes. Secure the lid and shake vigorously for about 15 seconds until well chilled.

  3. 4

    Strain and Serve

Strain the mixture into a chilled cocktail glass, ensuring the pear wedges are included in the pour.

Garnishing

  1. 5

    Add Cocoa and Chocolate

Dust the top of the cocktail with dark cocoa powder and finish with chocolate shavings for an elegant presentation.
