Preparation

    Soak the Rice

    Soak the basmati rice in water for at least 30 minutes before cooking.

    Prepare Jackfruit

    If using fresh young jackfruit, peel and chop it into small pieces. If using canned jackfruit, drain and rinse it.

    Chop Vegetables

    Slice the onions, chop the tomato, and slit the green chilies.

    Chop Herbs

    Chop the fresh cilantro and mint leaves and set aside.

Cooking

    Cook Onions

    In a large pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown.

    Add Spices

    Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf to the pot. Sauté for a minute until fragrant.

    Cook Jackfruit

    Add the chopped jackfruit to the pot and cook for about 5-7 minutes, stirring occasionally.

    Add Tomatoes and Spices

    Stir in the chopped tomato, ginger-garlic paste, green chilies, biryani masala, and salt. Cook for another 5 minutes.

    Mix Yogurt and Herbs

    Lower the heat and mix in the yogurt, cilantro, mint, and lemon juice. Cook for another 3-4 minutes.

    Add Rice and Water

    Drain the soaked rice and add it to the pot. Pour in the water and bring to a boil.

    Simmer Biryani

    Once boiling, cover the pot with a lid, reduce the heat to low, and let it simmer for about 20-25 minutes until the rice is cooked and water is absorbed.

    Fluff and Serve

    Remove from heat, let it rest for 5 minutes. Fluff the biryani with a fork and serve hot with raita or salad.
