Vada Pau Preparation

Prepare the Potato Filling
Boil the potatoes until soft and mash them. In a pan, heat oil and add mustard seeds, curry leaves, chopped green chilies, and grated ginger. Sauté for a minute, then add turmeric powder and the mashed potatoes. Mix well and season with salt. Let it cool, then form small balls.

Make the Batter
In a bowl, mix the besan with water to make a thick batter. Add salt and red chili powder to taste.

Fry the Vadas
Heat oil in a deep pan for frying. Dip each potato ball into the besan batter and fry until golden brown. Remove and drain on paper towels.

Assemble the Vada Pau
Slice the buns in half and lightly toast them if desired. Place a vada inside each bun. Add green and sweet chutney to taste, and sprinkle with red chili powder. Close the bun and serve hot.
