Marinate the Chicken

In a large bowl, combine the chicken pieces with yogurt, ginger, garlic, green chili, lemon juice, and salt. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes and then drain.

Layering

In a heavy-bottomed pot, heat the cooking oil over medium heat. Add the marinated chicken and cook for about 5-7 minutes until the chicken is browned. Then, layer the soaked rice over the chicken. Sprinkle the chopped mint and coriander on top.

Cooking

Pour 4 cups of water over the rice. Cover the pot with a tight-fitting lid and bring to a boil. Once it starts boiling, reduce the heat to low and let it cook for 25-30 minutes until the rice is fully cooked and has absorbed all the water.

Rest and Serve

Turn off the heat and let the pot rest for 10 minutes before opening the lid. Fluff the rice gently with a fork and serve hot, garnished with additional mint and coriander if desired.
