    Prepare the Akuri

    In a bowl, beat the eggs with salt, black pepper, and spices (cumin, turmeric, and chili powder) to taste. In a pan, melt 25g of butter over medium heat, add finely chopped onion, and sauté until translucent. Pour in the egg mixture and stir gently until cooked to your liking.

    Cook the Bacon and Sausages

    In another pan, cook the smoked bacon until crispy, then add the Shropshire pork sausages to the same pan and cook until browned and cooked through.

    Grill the Mushrooms and Tomatoes

    Heat a grill pan and add the field mushrooms and halved tomatoes. Grill until they are tender and have nice char marks on them.

    Prepare the Masala Beans

    Open the can of masala beans and heat them in a small saucepan over medium heat until warmed through.

    Assemble the Dish

    Butter the home-made buns with the remaining butter and toast them lightly. On each bun, layer the akuri, bacon, sausages, grilled mushrooms, grilled tomatoes, and a spoon of masala beans. Garnish with fresh coriander and serve hot.
