Prepare the Dough
In a large mixing bowl, combine the whole wheat flour and salt. Add the oil or ghee, and mix well. Gradually add water and knead to form a soft, pliable dough. If using yogurt, add it in with the water.

Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes to 1 hour.

Shape the Roti
Divide the dough into equal-sized balls (about the size of a golf ball). On a floured surface, roll each ball into a round shape, about 6-8 inches in diameter, ensuring it is not too thick.
