Roasting the Vegetables
Preheat your grill or oven to a high temperature. In a bowl, toss the diced pineapple, sweet potato, and Padrón peppers with olive oil, tandoori spice mix, and salt until well coated.

Grill the Mixture
Place the mixture on a grill or a baking sheet and roast for about 15-20 minutes, or until the sweet potato is tender and the peppers are charred, stirring occasionally for even cooking.

Mix and Season
Once cooked, remove from heat and transfer the mixture to a serving bowl. Sprinkle with chaat masala, chopped cilantro, and drizzle with lemon juice. Toss gently to combine.
