Prepare the Paneer Filling
In a pan, heat olive oil over medium heat. Add diced onions and sauté until they turn translucent. Add diced bell peppers and cook for an additional 2-3 minutes. Add the paneer, garam masala, salt, and black pepper. Cook for another 5 minutes until the paneer is slightly golden. Remove from heat and let it cool.

Assemble the Rolls
Take a roomali roti, place a handful of green leaves in the center, add a generous amount of the paneer mixture, and roll it up tightly. Repeat for the remaining rotis.

Crisp the Rolls
Heat a non-stick skillet over medium heat. Place the rolled roomali rolls seam side down and cook until they are golden and crisp on all sides, about 2-3 minutes per side.

Serve
Serve the Paneer Roomali Rolls hot with mint chutney on the side.
