    Prepare the Ingredients

    In a medium bowl, combine the diced mangoes, chopped red onion, grated ginger, minced garlic, and salt. Mix well and set aside.

    Cook the Chutney

    In a large saucepan, combine the brown sugar, apple cider vinegar, ground cumin, ground coriander, and red chili flakes. Bring the mixture to a boil over medium heat.

    Simmer

    Once boiling, add the mango mixture to the saucepan. Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally, until the chutney thickens.

    Cool and Store

    Remove the chutney from heat and let it cool completely. Once cooled, transfer to sterilized jars and store in the refrigerator.
