Prepare the Filling
In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.

Add the ground lamb to the skillet and cook until browned, breaking it apart with a spoon.

Stir in cumin powder, coriander powder, garam masala, red chili powder, and salt. Cook for another 5 minutes until the spices are well combined. Add chopped cilantro and mix well.

Assemble the Samosas
Let the filling cool slightly. Take a sheet of filo dough, and cut it into strips. Place a spoonful of the filling at one end of the strip, fold the dough over to form a triangle, and continue folding the triangle along the strip until you reach the end. Seal the edge with a little water.

Repeat the process with the remaining filling and dough.

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.
