    Soak the Dal

    Rinse the black urad dal thoroughly and soak it in water for at least 6 hours or overnight.

    Cook the Dal

    In a large pot, add the soaked dal and 4 cups of water. Bring to a boil, then reduce to a simmer. Cook on low heat for 24 hours, stirring occasionally.

    Prepare the Tempering

    In a separate pan, heat the ghee over medium heat. Add cumin seeds and let them crackle. Add chopped onions, ginger, garlic, and green chili, sauté until onions are golden brown.

    Add Tomatoes and Spices

    Stir in the chopped tomatoes, coriander powder, turmeric powder, and salt. Cook until the tomatoes soften.

    Combine and Simmer

    Add the tempering mixture to the cooked dal. Stir in the garam masala and let the dal simmer for an additional 30 minutes.

    Garnish and Serve

    Garnish with fresh cilantro and serve hot with rice or naan.
