    Prepare the Ingredients

    Finely chop the onion, green chili, and ginger. Dice the tomato for the Akuri. Cut the additional tomato in half for grilling.

    Sauté the Mixture

    In a pan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.

    Add Spices

    Stir in the ginger, green chili, coriander powder, turmeric powder, salt, and black pepper. Cook for another minute until fragrant.

    Scramble the Eggs

    In a bowl, whisk the eggs and pour them into the pan. Stir gently to scramble, cooking until just set but still creamy.

    Prepare the Grilled Tomato

    In a separate skillet, grill the halved tomato cut-side down until slightly charred.

    Serve

    Serve the Akuri on a plate, topped with fresh coriander leaves, alongside the grilled tomato and warm buns.
