1. Prepare the Vegetable Mix

In a large pan, heat 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until they turn translucent. Then, add the ginger-garlic paste and cook for another minute.

2. Cook the Vegetables

Add the chopped tomatoes, bell pepper, cauliflower, and green peas to the pan. Stir well and cook for about 5-7 minutes until the vegetables are slightly soft.

3. Combine with Spices

Add the boiled and mashed potatoes to the vegetable mix. Sprinkle in the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix everything thoroughly and cook for another 5-10 minutes, mashing the mixture with a spatula to blend the flavors.

4. Finish with Butter and Coriander

Remove from heat and stir in the remaining tablespoon of butter and chopped coriander leaves. Adjust salt if necessary.

5. Prepare the Pav

In a separate pan, lightly toast the Pav (bread rolls) with some butter until golden brown on both sides.

6. Serve

Serve the hot Bhaji with the toasted Pav, lemon wedges, and extra coriander leaves for garnish.
