Method

Preparation

  1. 1

    Prepare the Filling

In a large skillet over medium heat, add the ground lamb. Cook until browned, breaking it apart with a spatula as it cooks.

  2. 2

Add the chopped onion, garlic, and ginger. Cook until the onion is translucent.

  3. 3

Stir in cumin, coriander, chili powder, and salt. Cook for another 5 minutes, allowing the spices to blend.

  4. 4

Remove from heat, and mix in the cilantro and lemon juice. Let the filling cool.

  5. 5

    Prepare the Dough

In a bowl, mix 2 cups of all-purpose flour with a pinch of salt. Gradually add water until a dough forms. Knead until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.

  6. 6

    Shape the Samosas

Divide the rested dough into small balls. Roll each ball into a thin circle. Cut the circle in half to form two semicircles.

  7. 7

Take one semicircle, and form a cone by folding the straight edge over. Seal the edge with a little water. Fill with the lamb mixture and seal the open edge by pinching it closed.

  8. 8

    Fry the Samosas

Heat oil in a deep frying pan over medium heat. Fry the samosas until golden brown and crispy. Drain on paper towels.

  9. 9

    Serve

Serve hot with chutney or yogurt sauce.
