    Prepare the Chettinad Masala

    In a dry skillet, lightly roast the Chettinad masala ingredients until fragrant, then grind to a fine powder.

    Sauté the Aromatics

    Heat oil in a heavy-bottomed pot. Add mustard seeds and let them splutter. Add curry leaves and chopped onions. Sauté until onions turn golden brown.

    Add Lamb and Spices

    Stir in the ginger-garlic paste and sauté for 2 minutes. Add the lamb pieces, turmeric powder, and the prepared Chettinad masala powder. Cook until the lamb is browned on all sides.

    Cook the Lamb

    Add the chopped tomatoes, salt, and water to the pot. Mix well, cover, and simmer on low heat for about 45 minutes, or until the lamb is tender.

    Finish with Coconut

    Stir in the grated coconut and cook for an additional 10 minutes. Adjust salt as needed.
