1. Prepare the Jackfruit

If using fresh jackfruit, clean, peel and chop it into small pieces. If using canned jackfruit, drain and chop it.

2. Soak the Rice

Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain before using.

3. Cook the Jackfruit

In a large, heavy-bottomed pot, heat oil or ghee over medium heat. Add cumin seeds, bay leaves, cinnamon, cloves, and cardamom. Sauté until fragrant.

4. Add Onions and Spices

Add sliced onions and sauté until they are golden brown. Stir in ginger-garlic paste, turmeric powder, and green chilies. Cook for a couple of minutes.

5. Mix in Tomatoes and Jackfruit

Add chopped tomatoes and cook until they soften. Then, add the chopped jackfruit and biryani masala. Mix well and cook for 5-7 minutes.

6. Layer the Rice

Add the soaked and drained basmati rice to the pot. Pour in 4 cups of water and salt to taste. Stir gently to combine.

7. Cook the Biryani

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it cook for about 25-30 minutes or until the rice is cooked and the water is absorbed.

8. Garnish and Serve

Once cooked, fluff the biryani with a fork. Garnish with chopped coriander and mint leaves. Serve hot with raita or salad.
