Chutney Preparation

Soak Tamarind
In a bowl, soak the tamarind pulp in warm water for about 15 minutes until it softens. Once softened, extract the pulp and discard the seeds.

Combine Ingredients
In a saucepan, combine the tamarind pulp, chopped dates, brown sugar, and water. Stir well to mix all the ingredients.

Cook the Mixture
Heat the saucepan over medium heat and bring the mixture to a boil. Reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally, until it thickens.

Add Spices
Once the chutney has thickened, add cumin powder, coriander powder, red chili powder, salt, black salt, and grated ginger. Stir well to combine.

Cool and Store
Remove the chutney from heat and let it cool to room temperature. Once cooled, transfer it to an airtight container and refrigerate. The chutney can be served chilled or at room temperature.
