Cooking Instructions

  1. 1

    Prepare the Chicken

Preheat the oven to 200°C (390°F). Rinse the whole chickens under cold water and pat dry with paper towels. Rub them with olive oil, minced garlic, salt, and black pepper. Place fresh rosemary inside the cavity of each chicken.

  2. 2

    Roast the Chicken

Place the chickens in a large roasting pan and roast in the preheated oven for about 1.5 hours, or until the juices run clear and a thermometer inserted into the thickest part reads 75°C (165°F).

  3. 3

    Prepare the Vegetables

While the chicken is roasting, peel and chop the potatoes and carrots into large chunks. Slice the onions into wedges.

  4. 4

    Roast the Vegetables

In a separate baking tray, toss the potatoes, carrots, and onions with olive oil, salt, and pepper. Roast in the oven for about 45 minutes, or until golden brown and tender.

  5. 5

    Cook the Green Beans

In a large pot, bring water to a boil and add a pinch of salt. Add the green beans and cook for 4-5 minutes until bright green and tender-crisp. Drain and set aside.

  6. 6

    Prepare the Bread Rolls

Warm the bread rolls in the oven for about 5-10 minutes.

  7. 7

    Serve the Feast

Once everything is ready, carve the chicken and serve it alongside the roasted vegetables, green beans, and warm bread rolls. Offer butter for the rolls.
