Prepare the Spinach Filling
In a skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add fresh spinach and cook until wilted. Remove from heat and let cool. Mix in cream cheese, salt, and black pepper.

Prepare the Salmon
Season the salmon fillet with salt and pepper. Place the fillet on a sheet of puff pastry.

Assemble the Wellington
Spread the spinach mixture over the salmon fillet. Fold the puff pastry over the salmon and seal the edges. Brush the top with egg yolk for a golden finish.

Preheat the oven to 400°F (200°C). Place the assembled Wellington on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until the pastry is golden brown.
