Method

Preparation

1

Marinate the Meats

In a bowl, combine olive oil, minced garlic, lemon juice, chopped rosemary, salt, and pepper. Add lamb chops and chicken wings to the marinade, coating well. Cover and refrigerate for at least 2 hours, preferably overnight.

2

Prepare the Lobster

If using steamed lobster, prepare a steamer and steam lobster tails for about 8-10 minutes until cooked through. For fried lobster, heat oil to 350°F (175°C) and fry lobster tails for 4-5 minutes until golden brown.

Cooking

3

Grill the Meats

Preheat grill to medium-high heat. Remove lamb chops and chicken wings from the marinade and grill for about 6-8 minutes for lamb and 10-12 minutes for chicken, turning occasionally until cooked through.

4

Prepare Truffle Fries

While the meats are grilling, deep fry or bake the potato fries until crispy. Drizzle with truffle oil, sprinkle with grated parmesan, salt, and chopped parsley, and toss to combine.

Serving

5

Plate the BBQ of Bones

Arrange the grilled lamb chops, chicken wings, and lobster tails on a large serving platter. Serve with truffle fries and the three signature sauces on the side.
