Cook the Pasta
In a large pot of boiling salted water, cook the spaghetti or tagliatelle according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Brown the Meat
Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 8-10 minutes.

Add Tomatoes and Herbs
Pour in the crushed tomatoes, and add the dried oregano, dried basil, salt, and black pepper. Stir to combine and bring the mixture to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the richer the flavor will be.

Toss the cooked pasta with the Bolognese sauce until well coated. Serve hot, garnished with grated Parmesan cheese.
