Preparation and Cooking
Marinate the Chicken
In a large bowl, combine olive oil, lemon juice, minced garlic, cumin, paprika, salt, and black pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Vegetables
While the chicken is marinating, slice the red onion and dice the bell peppers. Set aside.
Cook the Rice
Cook the rice according to package instructions. Set aside when done.
Skewer and Grill
Preheat your grill to medium-high heat. Thread the marinated chicken thighs onto skewers, alternating with slices of red onion and diced bell peppers. Grill for about 15-20 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
Serve
Serve the grilled chicken kebabs with cooked rice, flatbread, roasted vegetables, a sprinkle of curry powder, and drizzle with deluxe sauce.
