    In a small bowl, mix together honey, soy sauce, minced garlic, fresh thyme, salt, and black pepper to create a marinade.

    Place the duck breasts in a zip-lock bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

    Heat olive oil in a skillet over medium heat. Remove the duck from the marinade, reserving the marinade for later. Place the duck breasts skin-side down in the skillet and cook for about 6-7 minutes until the skin is crispy. Flip the duck and cook for another 4-5 minutes for medium-rare, or longer if desired.
